this week on cooking with mae (and her cousin), we've got fish tacos!

i'm a cat, so i automatically like this. but even beyond that, like, oh my goodness. these give gilgeori toast a run for its money, and that was literally to die for already!

i am lost in the sauce. let me tell you about the sauce. it's a mix of mayo and sour cream seasoned with lime juice, salt, pepper, and what is, in my opinion, the STAR✨ ingredient: canned chipotle pepper in adobo sauce. i had no idea how good that stuff is. try it if you get the chance! it's spicy though. but mixed in with all that mayo and sour cream, not so much.

the fresh salsa went very well with the sauce. i'd almost want to eat these without the fish! almost. the fish frying process was pretty standard; fish in milk, then dredge them in a mix of flour and chili powder, then fry in oil. once you've breaded one thing, you've breaded them all. still tastes amazing every time.

finally, just warm up the tortillas (in a bit of oil, naturally) and assemble your amazing taco. and these are definitely amazing tacos. the kind that make your eyes roll back involuntarily. oh baby baby. i wonder if i still have any left over...
