for this week's mae's munchies™ we're dipping into some jalapeño-corn dip!

another new york times recipe. they've definitely got some good ones, and this is no exception. some jalapeños and green chiles are combined with corn, cream cheese, sour cream, and monterey jack. there's honestly a lot more cheese in here than anything else, but it's not even mentioned in the title! but i suppose "jalapeño-corn-cheese-sour cream-monterey jack dip" isn't particularly catchy, is it?

you essentially put all of that (plus some mayo, chili powder, lime juice, etc., give or take some bacon) into a skillet and start cooking, ending it off with a couple minutes in the broiler. it's very simple. and i can appreciate that!

i can especially appreciate the taste. dip some tortilla chips (or some carrot sticks, celery sticks, or whatever other sticks you may enjoy. i won't judge) right in and have a chomp! it has some kick, but only a bit, since all that cheese and cream tones it down. the corn gives it some sweetness, while the lime juice contributes a very nice tanginess.

i really like it, especially considering how easy it is to make. definitely one to bring out for parties or family gatherings, i figure. try this one out!
